Vegetable Fried Rice:
Ingredients:
- 3 cups cooked jasmine rice, chilled
- 1 cup mixed vegetables (peas, carrots, corn)
- 2 eggs, beaten
- 3 green onions, chopped
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 teaspoon sesame oil
- 2 tablespoons vegetable oil
Instructions:
- Heat vegetable oil in a wok or large skillet over medium-high heat.
- Add beaten eggs and scramble until just cooked. Remove from the wok.
- In the same wok, add more oil if needed. Stir in mixed vegetables and cook until tender.
- Add chilled cooked rice to the wok, breaking up any clumps.
- Pour soy sauce, oyster sauce, and sesame oil over the rice. Stir to combine.
- Add the scrambled eggs back into the wok and mix well.
- Stir in chopped green onions and cook for an additional minute.
- Serve hot as a delicious side dish or a standalone meal.
